This recipe I just made tonight. I actually used pieces of two recipes to get this one and I was working off of iPhone pics of these two recipes (each from cook books from relatives) and had to keep flipping back and forth in my camera roll. It was kind of annoying, which was what made me decide to do this once and for all! I decided to do this after, so no pic - not sure I will ever do that, we'll see...
Penne and Peppers with Turkey Sausage
(Weight Watchers 8pp)
6 oz uncooked whole grain penne
8 oz reduced fat smoked turkey sausage cut into 1/4 thick pieces
**(I used the full 13 oz package and upped the points value a bit - and actually this ended up making more than the 4 servings that I thought it would, so I might have been ok without upping.)
Cooking spray
2 cups tri color bell peppers (the recipe called for a refrigerated mix, but I used fresh and had extra, which I froze for next time)
1 tsp garlic powder
Red pepper, black pepper, and salt to taste.
1/3 c shredded parmesean
1) Cook the pasta according to the package directions, drain.
2) While the pasta cooks, cook the sausage in a large nonstick skillet over medium-high heat (about 6 minutes or until browned.) The recipe says to then drain and wipe the drippings from the pan with a paper towel, but I had very little grease, so I skipped this step. Add the bell peppers, seasonings. Saute 4 min or until crisp-tender. Add 2 tbsp water, scraping the pan to loosen the browned bits
3) Stir in cooked past, add cheese. Toss and serve immediately.
We served with pineapple and it was delish!
