Such a yummy soup! Def a favorite for us - I double, sometimes triple, this recipe and then freeze it in tupperware so that I can just pop the frozen soup in the crockpot throughout the winter!
1 1/2 lbs cooked shredded chicken
1 15 oz can diced tomatoes
1 - 14oz can green chile enchilada sauce
2- 4 oz cans diced green chiles
1- 15 oz can pinto beans, drained
1- 15 oz can corn
1 medium onion chopped
2 tbsp minced garlic
2 cups water
1-15 oz can chicken broth
2 tsp each: cumin, chili powder, salt, black pepper.
2 tbsp cilantro, chopped
Combine all ingredients in a crock pot (except cilantro and optional garnishes) cover and cook 6-8 hours
Garnish:
Cheese
Sour cream
Avocado, etc
